When PMS grabs hold of me and makes me it's bitch... emotional baking

Every 28 days or so, chocolate chip cookies just aren't enough... I need more, more salt, more caramel, more chocolate and more gooey sweetness.

Go ahead and judge me, I do.

I decided to whip up a batch of chocolate chip cookies whilst I was in the throws of PMS having its way with me. But I realized that this batch of cookies probably needed some pretzels and caramels thrown in for good measure.

A friend of mine told me that I am like Adele of the baking set, which is just about the highest compliment I have ever heard in my life. And it's true, when I am emotional, heart broken, sad, any sort of mood that would warrant listening to Adele, I go into baking mode and those in my life are then the lucky ones. I should really find a way to get some of my baked goods to Adele, we could really merge powers...

With this recipe, I melted the butter instead of creaming it and added more brown sugar then white sugar so that the end result would be chewy, gooey and moist.

The recipe:

Do ahead, unwrap about 1/2 the bag of caramels and cut each piece into 4 smaller pieces.

Sift together

2 1/4 cups flour

1 tsp baking soda

1 tsp salt

set aside

Melt, just so that its really, really soft, not all the way melted

3/4 cup butter

Add to the butter

1 cup of brown sugar

1/2 cup sugar

Whisk together the butter and sugar (I use my Kitchen aid cuz I love it, you can probably use a whisk and a mixing bowl because the butter is melted, but if you have a kitchen aid, why would you?) add to this 2 eggs and whisk away till well combined.

Add to this,

1 tsp Vanilla extract and whisk again.

Add 1 cup crushed up salted pretzles, 2 cups chocolate chips and the caramels to the flour mixture and mix just till well combined, being careful to not over mix.

Next, scoop the dough and roll into ballls. Then put into fridge for at least an hour.

And let's not fool anyone, enjoy a couple of those balls while you are waiting for that dough to chill, in this life, there aren't too many things as satisfying as eating raw cookie dough with raw egg in it. I like to live dangerously.

Bake on sheet pans lined with parchment paper or sprayed with some Pam, those caramels will stick to your pans for dear life and be a real bitch to clean.

Bake at 325 degrees for about 11-12 minutes. Its ok to under bake them, this helps keep them soft and chewy.
