I love yoga. And brownies. And caramel.

The other day one of my best friends invited me to go to hot yoga with her. The only proper way to thank her was to quickly whip up some salted caramel brownies before we met for yoga.
Guys, it's called balance.
I've made and eaten many, many, many, many brownies. This recipe from King Arthur flour is by far, my favorite go to to make brownies
The recipe has a few variations on the standard brownie recipe, which I love. It's all about the method. Every time.
Such as...
Using cocoa powder and chopped up chocolate
Melting the butter and sugar together till the sugar is almost all dissolved, this makes for a shiny beautiful crust that I immediately covered with salted caramel sauce.
I added the chopped up chocolate (otherwise known as chocolate chips, I didn't have chocolate chips but I did have 3 - 70% dark chocolate bars on hand that I chopped up... Nailed it) and I added directly into the butter and sugar mixture so that the chocolate would melt, cuz... fudge.
Mixing together the eggs, cocoa, salt and baking soda and salt together, then mixing the 2 of these combos together and the flour at the end.
It's a great recipe and you should try it cuz I know things.
I find it completely immoral to not frost a brownie no matter how shiny and glossy that top crust is.
In this case, salted caramel sauce.
Recipe
Pour 1 cup of sugar into a saucepan
Have on your counter and at the ready, 1/2 cup Heavy cream, 8 Tablespoons of butter cut up into pieces and 1 tsp salt.
While making caramel stay next to your pan, no matter what happens. I know times are bat shit crazy right now, but while making caramel, it only takes a white hot second for things to go very bad, very quickly. Have all that you need next to you (wine, weed, beer, whatever, you do you) But go ahead and lay off the Instagram as well until the caramel is in a bowl cooling off, trust me. I speak from experience.
Heat the sugar on med high heat until the sugar starts to melt. Taking the pan on and off of the heat swirling the pan in gentle circles.
DO NOT STIR THE SUGAR! NO MATTER HOW TEMPTED YOU FIND YOURSELF!
It will cause crystals and ain't nobody got any time for that in caramel sauce.
Once the sugar is all melted and a deep, dark, beautiful amber color, lower the heat and add the butter. Being very careful, a bitch could really get burned here. Whisk together and slowly add the heavy cream, once again, being very careful, we need no bitches getting burned in the glory of making caramel.
Whisk the caramel for a couple of minutes on the heat, take off the heat, add the salt and pour into a heat proof container and let cool.
No need to taste test this yet unless you are really into being burned.
Once it is completely cooled, pour over brownies (or grab a spoon and kiss the sky) store in an airtight container in the fridge.
