Food styling and profiling...

One of the great things about new, innovative food creations to hit the scene, is the inspiration it gives to chefs to think outside of the box. Change the game, switch it up, take it to another level. Take something we already know and love and make us love it even more.
There is a place in Chicago called Endgrain doing just that.
They have cleverly taken the biscuit we all know and love and turned it into a doughnut.
It's really all about doughnuts right now and it's more then alright with me.

And if you are as lucky as I am, you'll have this bearded cutie feed you a doughscit.
Now I am sure that you are thinking, just how hard could it be to basically fry up a biscuit? And to that question I answer, it could be a real bitch. Making biscuits really is a thing of beauty, yet with one wrong move, you could end up with doorstops rather then the light flaky end result you were hoping for.
The same goes for frying up food. There really is some technique to it, you cant just go haphazardly dropping whatever food item you feel like into the deep fryer. But boy, I sure as shit did indeed do that at my first job, and it was a blast. But I certainly never ate that Snickers I ever so happily dropped into that fryer.
When you deep fry foods, you need to be aware of the oil you are working with, what temperature it will do it's best work at and what foods are you frying up?
By-the-way, I later figured out that dipping that Snickers bar into some batter first really made a difference.
The clever folks at Endgrain worked endlessly to come up with a biscuit that they could fry to perfection, glaze it and then fill it. It is a thing of beauty and it comes in a couple of flavors, Honey Glazed and my favorite, as in, I wish that I could have this thing everyday, German Chocolate. They also make some amazing yeast dough doughnuts as well, but my focus was all on their doughscit.
When you get to try out what is basically someones labour of love, you can really taste it.
Oh the jokes...
But for real, the doughscit and their doughnuts are worked on until they reached perfection on all points, the dough, the oil, the fryer, the glaze and the filling. What you end up with is a treat that you've never had before but have finally been satisfied in a way you didn't know possible.
